Food, Feminism, & Life is moving!
Tumblr has been good to me, but it is time to move on. Blogger is much much more user friendly & I’ve been told numerous times that people are having trouble leaving comments on my Tumblr.

Black Bean Taco "Cupcakes"
I had a serious crunchy food craving yesterday & decided to finally take a look through the Emily Bites main course cupcake recipes that everyone raves about. Her original Taco Cupcakes inspired my version. Mine is vegetarian because I didn’t feel like eating ground beef last night. Skipping the beef & loading them up with black beans saved 2 PP per Cupcake! I ate two right out of...

Cake Batter Blondies!
Oh yes, these happened. I’m known for bringing the sweetest of desserts to family parties. So much so that my dad’s best friend (who has a sweet tooth like no other) said to my mom, “Jamie’s coming right? What dessert did she come up with?” I tend to make fairly complex & time consuming desserts. Instead of standing over my stove & hand dipping truffles, I...

Chicken, Cheddar, & Roasted Apple Sliders
I mentioned the blog What’s Cookin’ Chicago? the other day & hope you all checked it out. She has some great recipes! I saw these on there & knew I wanted to make them immediately & finally got to it last night. One pound of ground chicken made 12 sliders so I froze more than half of them to have for quick lunches & dinners. Total win in my book.
Mine look nothing...

Baked Potato Soup.
Frank does not eat soup of any kind, except loaded baked potato. After talking to my friend Erica last night, who was making potato soup at home, I decided that I should make this for him. He loved it! The only other person who loves potatoes as much as Frank is my sister, who’s going to my house to get leftovers this afternoon.
This soup is a lightened up version of the loaded baked...

Roasted Cauliflower Gratin
Adapted from Ina Garten
I adore cauliflower, and anything that’s baked until cheesy & bubbly, so it made perfect sense that I would make this. It was so comforting & loaded with crunchy bits of cauliflower. This would be a perfect side dish to any meal. It’s rich, but not too rich, and I’ve lightened it up from the original recipe. Ina used gruyere cheese, but I opted...

Cheddar, Cracker, & Panko Chicken
Adapted from What’s Cookin’ Chicago? (go check out this blog. It’s wonderful!)
This recipe exceeded all of my expectations. I may or may not have stared at it through my oven in awe of the cheesy crust that formed. I served this with cauliflower gratin & a side of honey mustard for dipping. You don’t really need the honey mustard, but I’m an addict.

The Best Alla Vodka Sauce Ever. No, really.
This is a recipe that my future mother-in-law gave me & it’s one of my favorite things to make. It comes together so quickly & tastes better than alla vodka I’ve ordered in Italian restaurants. It isn’t too creamy, and the pieces of prosciutto give it a ton of flavor. Serve it over your favorite pasta or just dip some bread sticks in it. I like it both ways.
This sauce...

Wintery Kale & Chickpea Soup
This is one of those amazing one pot meals that comes as the result of being towards the end of the week with random groceries left in the house. I basically looked through my fridge & pantry & pulled these ingredients together. The result was a warm & hearty bowl of soup that tasted a little like ginger, a little like garam masala, and a lot like winter.

Cheese Stuffed Shells
Everyone has their own stuffed shells recipe, but this is mine. I very seldom get a craving for a stuffed pasta, but when the craving hits it has to happen. These are cheesy & baked until bubbly & come out perfect. They’re also so easy to prepare. You can prepare them ahead of time & pop them in the oven when you get home, or take about 20 minutes to prepare them when you get...

Filling in for a busy puppy mommy..
Hey all! My name is Erica, I’m a friend of Jamie’s and since I know she’s been busy with little Miss Layla, I volunteered to do a little guest blog for her so y’all aren’t left hanging for too long (and because it’s something I’ve always wanted to do, but totally don’t have the dedication to keep up with a blog of my own)! Now the funny part about...
Hi there.
I’m apologizing for being a bad blogger lately. Life has been hectic & I’ve been slacking. This little lady has been keeping us very busy.
I have a few recipes to post soon. Hopefully I’ll get to a few tonight! I also finally got my engagement party photos back & need to sort through & post them.
Hope everyone had a wonderful Halloween! xO.

VeganMoFo: Slow Cooker Vegetarian Chili
Mmmmm chili. Nothing is better on a cold night than a bowl of thick & hearty chili, especially when it’s meatless & loaded with good-for-you ingredients. I serve mine with some jalapeno corn bread, or with plenty of tortilla chips to use as forks. It’s comfort food at it’s max. If you load up your slow cooker on a Sunday morning your house will smell amazing all day while...

Fill in the Blank Friday ♥
Yay Friday! Today’s blanks have a fall theme, & it’s perfect for the type of day it is because it looks like Halloween outside. I love the days leading up to Halloween! Blue skies peeking out from behind rolling gray clouds, leaves blowing around, and that crisp chill in the air. I live for days like this.
1. Nothing says fall like curling up with blankets, pumpkin spice candles,...

VeganMoFo: Chocolate chip & vanilla bean pancakes
I apologize for the awful picture. I didn’t realize my camera was on a weird setting until I went back to look at the photos.
I made these for Frank & he loved them. We saved the leftover batter so he could make pancakes for himself during the week. In all honesty, these tasted like dessert to me. You could leave the chocolate chips out if you want to cut down on the sweet.

Fill in the Blank Friday♥
Oh how I love Fridays. The anticipation of sleeping in on Saturday morning keeps me going all day. I don’t have much on the agenda this weekend, which is nice. Hopefully just relaxing, getting some stuff done, & spending time with Frank.
1. The most selfless thing I’ve ever done is agree to move, if we had to, for Frank. That counts, right? I adore our home, where it’s...

H.R. 358: The Protect Life Act. Or, the Let Women...
Ahhh Stupak. You failed, so now we have H.R. 358 to battle. No, it will not pass the Senate, but it did already pass the House. I cringe when I think about what life would currently be like for women if the Senate also had a Republican majority.
Republicans aren’t the only ones to blame here. 15 Democratic congressmen also voted for he passage of HR 358. Here they are: Jason Altmire (PA),...

Vegan MoFo: Taquitos! Black bean, corn, & roasted...
These are the result of having leftover veggies, a bottle of good enchilada sauce, and my favorite corn salsa in my fridge. The enchilada sauce is from Trader Joe’s & so is the salsa. I was confused because the enchilada sauce said “chicken style base,” and I assumed that meant chickens. Turns out it’s a seasoning base that would be used for chickens, not actual...

Vegan MoFo 10: Crunchy Cheezy Casserole
I have been craving a creamy & cheesy casserole for days. Yesterday was the perfect day to make one, especially since I needed a big bowl of comfort food to eat while catching up on Private Practice. I had no idea how this was going to come out because I kinda made it up as I went along, but it came out exactly how I wanted it to. Next time you want a creamy casserole with a crunchy top you...

Vegan Mofo 8 & 9: I'm slacking. Here's a Survey!
I have some recipes to post, but I’m feeling lazy & sleepy so they have to wait until tomorrow. Here’s a vegan survey for now!
What is one food you thought you’d miss when you went vegan, but don’t?Cheese, duh. I still don’t know if I’m going to remain dairy-less after October, but man do I miss cheese!
What is a food or dish you wouldn’t touch as a child, but enjoy...

When Cutting Funds becomes Too Much
“Suspected domestic abusers go free as Topeka city, county officials bicker over funds”
Article here.
I know first hand what cutting budgets does to agencies, counties, and small government. I see it every single day at my job. This situation takes it too far. The city wants the county to continue prosecuting these misdemeanors, but the county is out of money (just like most counties around...

Fill in the Blank Friday ♥
I am so tired today. Thank goodness it’s Friday & a 3 day weekend is coming up. Staying up late to watch the games all week has left me a zombie. Hope you all had a great week!
1. Something popular that I can’t stand/just don’t “get” is the whole colored hipster glasses thing. Why are people wearing glasses without lenses in weird colors? You look stupid.

VeganMofo 6: Sliders & sweet potato cheeze fries
Last night was the elimination game for the Yankees, so I wanted to make “baseball food.” I really really really don’t like soy dogs, so I went with vegan sliders instead. I just can’t get past the texture of soy dogs. Yuck.
There wasn’t much *cooking* involved with this meal. Frank chopped me up a sweet potato & made french fries out of them in our deep fryer...

Why breastfeeding supremacists can suck my left...
jessicavalenti:
Yesterday, when I quoted Lorrie Hearts about a hospital’s decision to stop making free formula available to new moms in an effort to be “baby-friendly”, I got a lot of supportive comments and questions through Tumblr. (Thanks, y’all!) I also got a lot of hate and misrepresentation directed at me through Twitter. (Does this decide the never-ending social media battle in my head?...

VeganMofo 5: Cheezy Autumn Empanadas
This was my first shot at using Daiya. My mind was blown. It was so good that I don’t even know if I’ll miss real cheese, and I’m obsessed with cheese.
I’ve had these in my head for a while. Nothing screams fall to me more than a pan of roasted butternut squash & a jar of mango chutney. I’m not really sure why I associate chutney with fall, but I do. The...

VeganMofo 4: My wedding will be delicious.
No, my wedding will not be vegan. It won’t even be all vegetarian, but it will certainly be full of both vegan & vegetarian food, especially since two of my bridesmaids are vegans (and the loves of my life). I will also have quite a few gluten-free guests so there must be something served for them as well!
I adore food. I also adore cooking & feeding people & watching the...

VeganMoFo 3: Chickpea cutlets, duh.
Everyone makes these at least once, right? I like to keep frozen ones in my freezer to cook up for quick dinners & they seriously are just incredible. I wanted crispy comfort food the other night & these did the trick. I smothered them in my favorite vegan mushroom gravy (which I promise no one will know is vegan) & served them with mashed potatoes on the side. Comfort food,...

VeganMofo 2: Soup! All is not lost.
Today was the first day that it truly felt like fall in the last month. As soon as I felt the crisp fall weather when I woke up I knew that soup was going to be on my menu. That’s when I turned to the Creamy Roasted Tomato, Garlic, & Onion Coconut Soup I had saved from Oh She Glows. I thought that vegan eating would make me really miss the creamy soups I love to devour in the fall,...

VeganMoFo 1: Yup, I'm going vegan this month.
That’s right. I’m participating in VeganMoFo this year & I’m very excited about it! I’ve been eating vegetarian for a little over a month now & I’m psyched to blog about all things vegan in my life for the next month.
For those who read regularly, all of my food (and lots of non-food) posts will be vegan or about vegan things until November 1st. That means...

Fill in the Blank Friday ♥
Hello lovelies. Yay for Friday! This weekend starts MLB playoffs. I am so excited I can barely sit still today! Let’s go Yankees!
1. My current obsession is scarves. They’re so cuddly & just scream fall.
2. Pumpkins make me happy.
3. My greatest strength is my ability to do a bunch of different things at once. I’m crazy organized.
4. My inability to commit to things far...

Pizza Night, Fancy Style.
Don’t those figs look pretty?
I could live on pizza. I’m one of those people who likes fancy thin crust pizzas & those gourmet flatbreads you find in the snobbiest wine bars in Manhattan. I also love a regular NY style slice covered in mushrooms. Oregano is always added on top. Always.
Last night I really wanted a quick & easy dinner, but I didn’t want to order...

Tofu General Tso's
Is it Tso’s or Tsao’s? I always wrote it Tsao’s but who knows. Tso what?
If you really need to, you can make this with chicken but you should really give it a try with tofu first. The tofu in this recipe is crunchy outside & soft inside & is really just perfect. This is how I like my tofu & if you’re serving tofu to non-plant eaters then you should cook it...

Fill in the Blank Friday ♥
Happy Friday! This weekend is special because I’m trying on wedding dresses. So excited! Now for some blanks…
1. The best thing I did all week was watch the Yanks clinch the AL East division & head to the playoffs!
2. The fact that Grey’s Anatomy came back this week makes me super happy.
3. Pets are something I want. Frank & I want a dog so bad.

Food Porn: Avocado & Tofu Salad from Suhi Ya
This is one of my favorite lunches when I’m at work. I get it from a sushi place called Sushi Ya. It’s ice cold & has crispy lettuce, tomatoes, cucumbers, red cabbage, avocado, & silken tofu topped with carrot ginger dressing. So refreshing & filling. Now I want this for lunch again today.

What's With All the Vegan Posts?
Yeah, I’m not a vegan. I just really like vegan food. Actually, I’m trying to eat vegan as much as possible these days with the small exception for eggs & real cheese here & there. I haven’t really told anyone. I’m just sorta doing it & hoping no one bothers me about it. So far no one has noticed too much, except my BFF because she was with me in all of my...

What's For Dinner?
What does someone who loves to cook eat when they don’t feel like cooking? Trader Joe’s frozen foods, of course.
This is Trader Joe’s Chana Masala, Vegetable Byriani, & Naan. I always eat Indian food with Major Grey’s Mango Chutney on the side when I’m at home & if I’m in a restaurant I make sure to order whatever mango chutney they have on the menu.
This entire meal was 14...

My Favorite Vegan Mushroom Gravy
If I had to live on one vegetable for the rest of my life it would definitely be mushrooms. There is not a single mushroom I do not swoon over & I’ve actually caught myself standing in awe of the huge section of mushrooms in Whole Foods. This happened yesterday & the next thing I knew I was filling bags with creminis and rushing home to make chickpea cutlets & gravy. More on...

Curried Sweet Potato & Quinoa Stew
Yesterday was one of those perfect Sundays where it was chilly but sunny. It made me want to do nothing but stay in my sweats and veg out on my couch with all of the windows open & a big pot of soup on the stove. After a trip to Whole Foods and the farmer’s market that’s exactly what I did. I loved the way my house smelled from this soup was simmering.
This comes out thick,...

So, I'm getting married.
In about a year & two weeks. Ask me what I’ve done so far. C’mon, ask.
Okay. I’ve done nothing. I kinda feel like a lazy bride. I know that in some parts of the country you can plan a wedding in 3 months, but you simply cannot do that on Long Island. When Frank & I started looking at venues “for fun” in June half of them were booked through Fall 2012....

Chocolate Chip Crumb Muffins
This is a strange recipe for me because I don’t like chocolate. I woke up Sunday morning & wanted to make Frank something delicious for breakfast, plus I wanted my house to smell amazing while we cleaned & moved furniture all day. These muffins did the trick.
I didn’t try at all to lighten these up, but I imagine that you could easily do it & the results would still be...

Black Bean & Lentil Tostadas with Coriander
This recipe is mainly for the filling that I used to substitute ground beef. You can use this filling in anything you want, but I opted for crunchy, salty, warm tostadas. It would be great in enchiladas, soft tacos, or even stuffed into peppers with some quinoa.
The coriander was a last minute ingredient decision. It was begging to be used since it’s little spice jar sits lonely amongst...
